nice, very nice March 13, 2010 NAT (NY) i love that the ingredients aren't complicated-simple just the way i like things.
if you use the egg and milk instead of water along with a touch of oil(i use evoo) it really comes out soft and fluffy. it doesn't have a funny or strange taste at all like other brands i've tried. of course you can't expect it to be exactly like the real deal(wheat pancakes) but i got to say, this is by far the best i've tried out there and i've tried quite a few.
Pancakes are a bit dry November 29, 2009 Debra L. Bozeman (Metro Detroit) We made pancakes and like another review noted it took a lot more liquid to get the consistence we like. We use Soy milk, and have used soy milk with gluten pancakes and got great results. But with this mix, it was very think so we added about a 1/3 cup of water to get the thickness to our liking. They cooked up great. The taste was a bit dry compared to gluten pancakes, even with more syrup than we normally use. Not sure how to combat that?

I'm not crazy about these pancakes. They are super thick and the cornmeal that they put in them make them almost crunchy. They aren't light and fluffy like other gluten-free pancakes i've had. I might try to make waffles out of them and see how that is. Overall, anything is okay with butter and syrup, so I'll eat them, but won't share them with non-GF friends.

I like these as well as standard wheat pancakes. And because they're gluten-free, I can eat as many as I want. HINTS: Put a bit of REAL vanilla extract in the mix and serve with REAL maple syrup, like we have here in New Hampshire.
